Buckwheat & Chia seeds porridge

I have a tiny little confession to make, I don't like muesli or porridge, they are just not my kind of breakfast. I was raised on foods like gallo pinto (rice & beans) and huevos rancheros, hearty breakfast food that you crave in the mornings, food that fills the kitchen with spicy fragances and are full of flavour.

With this reference in mind, I always try to have delicious things for breakfast, because lets be honest, one can't have huevos rancheros everyday and a waist at the same time. That is why I want to share with you this marvellous thing that came in my Life Box, it's called buckwheat and it's marvellous! This fruit seed has an amazing bite, a mild taste that doesn't compete with other ingredients, it's a great gluten free substitute to rice and most importantly a great source of fibre and manganese, which makes it ideal if you are looking to keep your cholesterol and blood pressure levels down. 

Buckwheat keeps its shape and bite even after a couple of days of been soaking in milk, which makes it the perfect complement for the softness and texture you get out of soaked Chia seeds.

Layer this muesli up with sliced fresh fruit in a glass container and you got yourself the perfect to-go breakfast. 

Here is what you need to make 2 servings:

  • 95g / 1/2 cup buckwheat
  • 25g / 1/4 cup chia seeds
  • 480ml / 2 cups almond milk
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger

Stir all the ingredients in a medium size bowl, make sure everything is well combined. Cover with cling film and refrigerate overnight. 

Serve with fresh fruit, honey or apple sauce on top, the combinations are endless.
