I've been trying to find a 1 bowl cookie recipe for a while, mainly because I always fancy homemade cookies at the weirdest moments, like on a Wednesday night, around 10pm when the kitchen looks like a battlefield; the least I want to do is turn on the mixer or add to the pile of dirty dishes.
After much research and testing, I found the perfect recipe, by the even more perfect Martha Stewart. This recipe is hassle free, you don't need to worry about softening the butter, you don't even need butter! You only need 1 bowl, 1 wooden spoon and a glass of cold milk. Ah! And this is a kids friendly recipe :)
This recipe makes 26 cookies.
- 250g (1 cup) soft peanut butter
- 175g (3/4 cup) caster sugar
- 1 medium egg, lighlthy beaten
- 1/2 teaspoon bicarbonate of soda
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
- 145g (3/4 cup) chocolate chips (I'm using dark chocolate chips)
- 90g (1/2 cup) peanuts (I'm using roasted & salted peanuts)
Preheat the oven to 150°C (302°F). Line a baking sheet with parchment paper.
In a large bowl, using a wooded spoon, mix the peanut butter, caster sugar, egg, bicarbonate of soda, salt and vanilla extract until well combined. Mix in the chocolate chips and peanuts.
Dip your fingertips in water and roll the dough into 1 tablespoon size balls. Place them 2 inches apart on the lined baking sheet.
Place the sheet in the middle of the oven and bake for 20 minutes or until golden brown.
