I stumbled upon the Mango Lassi recipe when I was looking for a different kind of smoothie to have for breakfast. Right now I really love mango in the mornings, it's so fresh and its flavour is not too sweet or tangy, just the perfect balance. I prefer to buy it green and let it ripen at room temperature before freezing it, this way you make sure the mango ripens evenly and is less likely to have bruises.
My initial intention was to share with you the drink recipe (I'm still going to do it, so don't worry), but when I made the first batch, I saved in the freezer what I had left to have it the next morning for breakfast. To my surprise, the texture of frozen Mango Lassi was soft and creamy, I'm guessing it's thanks to the yogurt, so I decided to share with you this finding.
I'll probably add fresh mango to the next batch of popsicles I made and even mix it up a bit and probably add some coconut milk and maybe some mint. The possibilities are endless!
Here is what you need to make 10 popsicles or 2 servings of the drink:
- 450g / 2 cups frozen mango flesh
- 300g / 1 1/4 cup plain or Greek yogurt
- 1/8 tsp ground cardamom
- 1 tbsp honey
Blend all the ingredients together for about 2 to 3 minutes, or until there are no chunks of frozen mango left.
Serve right away if you want to have this as a drink.
To make the popsicles, add an additional 60ml of water (about a 1/4 cup) to the mix and blend for another minute. Pour the mix into the popsicles mould and tap it on the counter to remove any air bubbles. Freeze overnight. You could have all 10 popsicles for breakfast without a gram of guilt!
