Vegan chocolate pudding

This is definitely a grown ups dessert. Quick and easy, full of flavour, but most importantly, healthy. One of the main ingredients is avocados, which are full of vitamins, minerals and the best kind of fat. This tropical fruit is going to give the pudding a luscious and buttery texture, so you won't even believe there is no double cream in this desert. 

This recipe makes 4 to 6 portions. 

Here is what you need:

  • 3 ripe avocados, peeled and seeds removed. 
  • 6 tablespoons dark cocoa powder
  • 1/4 cup raw honey
  • 1 teaspoon pure vanilla extract
  • Sea salt and olive oil to serve (optional)

Toss the avocados, cocoa powder, honey and vanilla extract into the food processor and blend for a couple of minutes or until smooth. Add a little bit of water in case the food processor is having trouble getting an even consistency. 

Divide the mixture in the serving bowls and refrigerate for at least 1 hour. Sprinkle with sea salt and olive oil.
